Hi Anne.
On the subject of autoimmune problems and diet there was a book (out of print now I think) called Diet and Arthritis written by a Rheumatologist in the UK. Her name is Gail Darlington. She began treating her patients with an elimination diet after one of her young RA patients was seemingly cured by following such a diet under the care of another doctor. The book was published in 1996. In summation, through a careful series of elimination steps she is able to find the handful (usually more than one) of foods that are triggering the problem. In about 1/3 of the patients they are able to stop the drugs they take for the RA. In another 1/3 they can reduce the dosages. The remainder they cannot find any connection. It's an interesting book and much of what she says (speculating) about the possible influence of gut bacteria on the immune system is apparently being borne out these days by researchers. The ISBN is 978-0-09-181659-9.
